Further more, it is this wine, aged for 12 months in a combination of French and American oak barrels, that best represents the ancestral winemaking tradition of our winery. Dafermou – Assyrtiko volcanic terroir: the essence of Greece’s dry white, this 100 per cent Assyrtiko white wine comes from Arid, volcanic ash-rich soils of Santorini and other Aegean islands. Assyrtiko’s citrus flavours and tropical fruits, along with high acidity, have made it popular and are considered a good match to goat cheese. This wine is commonly compared to Sauvignon Blanc by wine enthusiasts who love making vibrant, refreshing wines.
